Spring Wheat Berry Salad

Ingredients to cook wheat berries
Yield: 4 cups cooked
- 2 cups ginger tea (2 tea bags)
- 3 cups red zinger tea (3 tea bags)
- 2 cups raw wheat berries
Ingredients to prepare salad
- 2 cups baby spinach
- ¾ cup toasted pecans
- 1 cup strawberries, halved or quartered
- 1 cup blueberries
- ½ cup loosely packed basil chiffonade
- 1 cup baby arugula
- 4 cups cooked wheat berry
- ½ cup feta cheese, crumbled (optional)
Directions
Brew the teas and discard the tea bags. Bring the tea to a boil and add the wheat berries. Cook until just tender, yet still have texture (about 20 – 25 minutes). Strain and chill in the refrigerator.
