Easy to make, these no-bake energy bites are just right when you need a healthy snack-on-the-go. For runners, they’re also ideal pick-me-ups — full of flavor with just a hint of natural sweetness. High in protein and healthy fats, and filled with fiber, these energy bites are nutrient dense, portable and easy to freeze for later. Keep in the refrigerator for a quick and healthy snack, breakfast or dessert.
No-Bake Almond ButterEnergy Bites
Makes 12 servings
Ingredients:
- 1 cup raw cashews
- ½ cup almond butter
- 1 cup pitted Medjool dates
- 2 teaspoons vanilla extract
- ¼ teaspoon fine sea salt
Preparation:
- Place the cashews in a food processor and pulseuntil you have a fine meal-like texture.
- Next add the almond butter, dates, vanilla andsalt.
- Pulse the food processor until you have a doughthat sticks together.
- Roll the dough portions (or scoop with a cookiescoop) into golf ball size portions.
- Keep energy bites in the refrigerator for up toa week – or freeze if there are any leftovers!
